Here’s the recipe for the gyro meat

[here it is roasting in the oven -- it was too cold outside to fire up the grill, so i set it on a roasting pan where the fat could drain away. The meat was okay but didn't live up to my expectations -- argh! haven't had a decent gyro in years! -- I had found a very good recipe when we still lived in Ohio in '99, but unfortunately I didn't keep a copy and I can't find it online anymore. It was one of those forums for Greek food -- we got a nice toasty crust that had perfect texture, but it was the flavor that was a bit off; maybe too much marjoram?]
