Heart Healthy: Peach Bread Pudding

6 peaches, peeled, pitted and chopped
1/2 cup maple syrup, apple juice concentrate, or honey (or to taste)
3 tablespoons lemon juice
1 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1 1-pound sourdough loaf, torn apart and “stalified” (let stand for a day so it gets stale:D)
2 1/2 cups vanilla soy milk, vanilla rice milk, or non-fat milk
4 egg whites, beaten
1/2 teaspoon salt

In a large bowl, combine peaches, maple syrup, lemon juice, cinnammon and nutmeg. Set aside. In another bowl, soak the sourdough pieces in the milk, about 30 minutes.

Preheat oven to 350 degrees F. Combine peach mixture, sourdough mixture, eggs and salt; mix well, and pour into a baking dish.

Bake for 45 minutes or until golden.

This is yummy hot, warm or cold.
