		<description>I want to know your opinion on whats the reason why some rice puto mixtures would result into cuchinta-like consistency.

I&#039;ve tried from 3 days to 1 day fermentation but the result were all the same, its more like of cuchinta than puto.

The only success I had before was Putong Puti. I soaked the rice for 3 hrs, and used baking powder for leavening. But there&#039;s no more fermentation. 

I believed I did something wrong but I can&#039;t figure it out. I really hope you can enlighten me on this.</description>

I stumble into your recipe after days of researching a good putong bigas recipe.  Thanks a lot for sharing this.  Am at the point where I have combined the two portions.  My question is 

  Does the fermentation process change when the mixture is covered with a tight seal, or is muslim or towel used to breathe out the excess gasses fermentaiton creates?

I will await your comment.  Thanks again for sharing your experiment.  
My kids love putong puti so much that I had to try to make it at home.

		<description>hello . thank you for the puto recipe. i started it last thursday, i cooked a sample batch on the designated date following your instruction. however, it did not rise and did not have a fermented taste to it. i gave it another day, by that time the puto dough had doubled in size. this time it was a success. it had the exact taste that i could remember. i made my 3rd sampling this evening. the dough is definitely bubbling at this time. i haven&#039;t tasted it yet because i want it to rest overnight. otherwise it would be very sticky. i made another batch tonight using the remaining 1 cup fermented dough to 2 cups galapong. thanks again.---maria</description>
