Rooibos: 3 Rooibos tea bags (or 3 tsp dried Rooibos leaf and bark) + (peppermint tea bag, optional) + 4 cups boiling filtered water. 20 minutes, or up to 2 hours. Sweeten (raw honey) or add lemon juice.

Ginger: 2 inches ginger root, chopped + 4 cups filtered water. 20 minutes or overnight.

Chai #1: 4 cups almond milk + 4 cups Ginger Tea (above) + 1/2 tsp. cinnamon + 1/2 tsp liquid stevia or 2 tsp raw honey + 1/8 tsp nutmeg + 1/8 tsp ground clvoes. Simmer 5 minutes.

Chai #2: 7 cups water + 1 tbsp fennel or anise seed + 6 green cardamom pods + 12 cloves + 1 cinnamon stick + 1/4 inch ginger. Boil 5 minutes, steep 10.
+ 2 tbsp rooibos, green, or white tea. Bring to boil, then simmer 5 minutes. Strain.
+ 6 tbsp raw honey + 1 cup almond milk
